Same as the skin, the color of the hair comes from melanin. There are two kinds of melanin:

According to doctor Desmond Tobin, from the University of Bradford (England), hair follicles have “melanogenic clock”. It slows down the creation of melanin and makes hair to lose its color (pigment).
Journal Science has published a study in 2005 study according to which the reason for gray hair is inability of melanocyte stem cells to make melanocytes.
Journal of Photochemistry and Photobiology has published a study in 2012 of how antioxidants affect human hair.
